At the Toronto Star this week, Cynthia David discusses the production of one of my favourite condiments - miso. She interviews the folks behind Tradition Miso who are a dedicated bunch who get up every day at 5am to stir the stuff. There are also miso-based recipes for Miso Salmon Salad, Miso Soup, and Miso Glaze for fish.
Susan Sampson reports on an egg-roll eating competition and the history of egg roll production at fast-food chain Manchu Wok. She's got an egg roll recipe to share as well.
Sampson also interviews University of Guelph food scientist Massimo Marcone, who appears to have eaten more ooky stuff than Anthony Bourdain.
Gordon Stimmell is raving about South African wines this week, both red and white, while Jean Lamantia raves about organic baby food.
At the Globe and Mail, Chef David Lee discusses bluefin tuna which is coming into season next month. Adriana Barton's got a piece on mead, and while her references are based on the west coast, I've had fantastic mead from Rossignol in PEI, and don't forget that Ontario's own Church-Key Brewing makes an awesome version from purple loosestrife.
Also in the Globe, Heather Sokoloff explores the renewed interest in snails, and Cinda Chavich looks at the sous vide technique and why NYC health inspectors are banning its use, even by top chefs such as Thomas Keller. Sara Minogue reports on attempts to grow produce in Iqaluit, where the phrase "local produce" would give those 100-mile diet folks a heart attack. And finally Beppi Crosariol looks at a study that explores why we drink what we do, although the study seems to focus more on things like wine preferences and marketing, as opposed to the reasons people drink in general.
Rita DeMontis has an interesting piece in The Sun this week about Governor Schwarzenegger's latest visit to Toronto in which he promoted California produce. With everyone hopping on the local produce bandwagon, stuff from California might as well have the sign of the devil on it, but it's good to remember that there are a lot of items we get from Cali that we can't grow here, such as figs, dates, citrus fruit and rice. Also in the Sun, Elizabeth Baird seems to be as excited about strawberries as I am and offers up a recipe for strawberry pie.
